Cake Balls

I decided that my first post should be about something I love…SWEETS!
Over this past weekend, I wanted to bake a special treat for the kiddos (okay, I’ll admit, it was for myself as well). After browsing the net, I found a recipe for Cake Balls (aka: Cake Pops). The directions seemed easy, so I decided to give it a whirl.
Ingredients you’ll need:
- 1 box of cake mix
- 1 container of frosting (16 ounce)
- 1-2 bags of melting chocolate
(Note: Recipe makes 48 Cake Balls)
Directions:
1. Prepare the cake mix according to directions.
2. Once the cake is cool, crumble finely into a large bowl.
3. Stir in frosting until well blended (only use ¾ of the container; if you use the whole container, the cake balls will be super moist and have more of a cookie dough texture).
4. Use a melon baller or small scoop to form balls (I personally just hand-rolled them).
5. Place balls on a wax paper-covered baking sheet.
6. Cover with plastic wrap & chill in the refrigerator for several hours (note: you can also put them in the freezer for 15 minutes). You want the balls to be firm, not frozen. At this point, if you find you have too many, store extra in the freezer for later use.
7. Once firm you’ll need to start melting the chocolate coating.

8. Microwave the melting chocolate in a deep, microwave safe bowl. Microwave for 30 seconds at a time, stirring occasionally until smooth (note: the defrost setting works perfect).
9. Dip the balls into chocolate, using a toothpick or fork. Place them on waxed paper to set (if you want to add sprinkles, add before chocolate hardens).
This yummy treat is super easy. The only down side is, it’s a little time consuming, but well worth the wait. What I like best is the variations are endless! In my case, I chose white cake and buttercream frosting to please my picky eaters.

I have made chocolate and red velvet. Both of them I used cream cheese frosting and they were both delish. I want to make some for my sisters baby shower and use strawberry cake.

Val, they are so good & highly addicting. I need to make sure it's a once and awhile thing or I'll be rolling around like a ball (smiles)!

ReplyDeleteWhat a great first post! Lovely pictures...they almost make me want to make a batch. I have made them using a bunch of different cake and frosting combinations and they are all delish. I am a cake decorator and always have a lot of cake scraps around. I just bag 'em up and store in the freezer til I have enough to make a batch or get invited somewhere. These are great hostess gifts, great for teacher gifts, easily adapt to the season or decorating, and are always a hit. My dh has actually asked me not to let him know when they are around, he eats too many! Looking forward to following your blog.
