A Healthier Take On Chicken Fingers

Who doesn't love chicken fingers? For my family, it's an ultimate favorite! What if you could prepare them in a healthier way, that doesn't sacrifice taste. Well, you can! Check out this wonderful recipe I found/tried on Weight Watchers online! It's sure to be a family hit!

Chicken Fingers w/Ranch Dip & Homemade Seasoned Fries
Serving Size: 4 (9 Points Per Serving, Points Plus System)
- olive oil cooking spray
- 1 pound uncooked boneless, skinless chicken breast, cut into strips
- 1 tbsp. dijon mustard
- 2 1/2 packets of uncooked instant oatmeal
- 2 tsp. garlic herb seasoning, preferably salt-free
- 1/2 tsp. table salt
- 1/4 tsp. black pepper
- 2 large potatoes, russet, peeled, cut into 1/2 inch thick fries
- 1 tbsp. creole seasoning (can use "all seasons" as a substitution)
- 1/2 cup fat-free ranch salad dressing
Directions
- Preheat oven to 400 degrees. Coat a large baking sheet with olive oil cooking spray.
- Coat chicken strips with mustard. Combine oats, garlic herb, salt and pepper in a shallow dish. Dip chicken strips into oat mixture and turn to coat; place on prepared pan.
- Lightly coat potatoes with olive oil spray and sprinkle with "all seasons" seasoning. Arrange potatoes around chicken on pan.
- Bake, flipping once, until chicken is cooked through and both chicken & fries are tender and golden brown (about 30 minutes).
- Serve chicken & potatoes with dressing on the side.
- Yields about 3 ounces of chicken, 1/2 a potato and 2 tablespoons of dressing per serving.

This recipe is super easy and delicious! The "oat mixture" would also work great on homemade onion rings (baked of course)!
